I too prefer the mono recordings, but the stereo is a good, central set as
well. There are also items in the stereo recordings which Rubinstein had
not recorded earlier in his career (if your interest is more in Rubinstein
than Chopin). In particular, the disc with the third sonata and the one
with the ballades would be essential purchases if you wished to construct
your own "Rubinstein Edition" (assuming you opted for the middle cycle-- as
everyone, including myself, seems to be recommending).

A couple of years ago I started a listening project in which I compared
mazurkas from each of the three cycles. I had assumed, starting out, that I
would always prefer one of the two earlier recordings, but was surprised to
discover that I clearly prefered the stereo remakes in a handful of
individual pieces. I still prefered the earlier two overall, but the stereo
recordings are, by no means, shabby. Indeed, I can't think of many mazurka
sets I'd rather hear, except when compared to the earlier two cycles. I
feel much the same about the polonaises and nocturnes. I would avoid his
single (mono) recording of the preludes whatever you decide (the only truly
"bad" Rubinstein Chopin I know).

So I'd second the suggestion that, if the price is right, you can proceed
with confidence.
