To each his/her own, but I've never been interested in, nor understood why
others are interested in, listening to recordings of rehearsals. I go to a
restaurant to eat, not to hang around in the kitchen watching the chef.

I find that quite interesting actually. I have had the opportunity to
listen in on many great conductors' rehearsals in Berlin, and I enjoyed
seeing how they work and how they achive their results. But then of
course I played in orchestras myself, so the interest in the rehearsal
process was part of my musical education in general.
A lot of people do find these things interesting in other fields too as
can be seen by the many "making of" and "behind the scenes" docus out
there.
I find seeing how professional cooks work and how the food is cooked
interesting too, not just in the sense of reading recipes or watching
cooking shows in order to try the recipe, but also how they work. I
like the Japanese restaurants where they cook at the table.
