Bitrate. I don't care about having the most incredible sound ever - I want
decent sound, and to be able to get a LOT of music on. What level of mp3
files are reasonable? The default in the Creative software is 128 kbps,
the options are anything from 24 to 320. Is there a standard level? This
not a $10,000 stereo, I'm not expecting audiophile sound - just the best
balance between quality and and quantity.
Also, what's the difference between recording with a constant bitrate or
variable bitrate?

128 is fine for an IPOD. I doubt you could hear a difference if you went
higher.
You don't really need to mess with variable either. Voice is an analog
medium. In order to convert it to digital the music is 'sampled' at some
specified rate. The more times the music is 'sampled' per second the greater
number of data points that are available to recreate the file when played
back. More data files require more room to store so the overall size of a
music file increases. Theoretically, a file that has been sampled more will
sound better since the analog 'wave' can be recreated with greater accuracy,
i.e - there is more data available. It is also somewhat dependent on the
algorithm used to recreate the wave.
So, draw a sine wave on a piece of paper - that's your music. Divide each
cycle into a certain number of equal divisions - it's at this point the
music is 'sampled' and digitized. The intervening space (the portion of the
wave between samples) is recreated during playback by software. If you
change the divisions in the wave cycle from equal to unequal divisions but
keep the rate the same over the complete wave period then you've changed
from constant to variable.
That's the short explanation anyways .................voice is more
complicated obviously but you should be able to get the general idea.
