The hard part will be making a caliper mount for a proper disc brake. How
much room do you have between the legs?

There is 5" between the two lower legs. The distance between the outside
edge of the axel holes is 8" and the inside distance is 6".

Probably be best to use a matching axle unless it is just "through
bolted". Usually there is a pinch bolt on one side to allow some movement
so the forks don't bind up.
I don't see any pitch bolts, and I also don't know what the bolts on the
right and left are for.

Here's the original front Triumph wheel, the axel is shorter than 8", is
narrower than 20mm and looks like it has a spot for a pinch bolt.
