I had thought that if I ever had to take the long-lost Ducati swingarm
again I would put a zerk fitting in. Would that have worked?

Sure would. Any time you can keep that area lubed it makes for much easier
removal. On my CZ400, I made my own bolt with grease ports and a zerk
fitting on the end (like the old Honda street bikes) to keep it lubed.
Putting a zerk fitting on the swingarm tube would have required welding a
boss to the tube as the tube is too thin to tap for a 1/4" NPT fitting,
possibly causing it to warp.
