level of the underground shopping arcade under Umeda station, about
two blocks NW from Hankyu Department store. It's a very large shop
carrying dozens of different brands, as well as every type and size
metal blanks, scale and handle materials, hardware, and tools for
knife making. If you want a map to the place, e-mail me
(steve@xxxxxxxxxxxxxxx) with a correct address and I'll send it to
you. You may never find your way out without a map.... There are
dozens of kilometers of shopping arcade under Umeda station, on three
levels! I've been happily lost down there for hours!
There is a nice map here:

This is one of the shops to which I sent maps for the original poster. That's JR Osaka Station in brown in the map on the web. This is my favorite shop in Osaka as it carries everything from completed knives to every conceivable tool, part, etc., etc., etc., that anyone would ever need to make any kind of knives. They even sell a flint bladed, stag handled knife!
I sent him two different maps of shops for Osaka and two maps for Kyoto shops.
The rest of the website is worth a look, includes online
shopping, but is in japanese only. Bumped into this place on my
last trip over, spent some time, but no money, very good stuff,
but I can't really afford what I liked. Prices seemed high to me, but I don't really know Japanese knife prices.
My last visit there was seven years ago, but the prices were about the same for all the various shops. Only the inventory was different.
In Kyoto, there is a very good shop on Shijodori, midway between the
Keihan train stop and Kawaramachidori, on the north side. The sell
mostly kitchen knives, but have a large selection of folders towards
the rear of the store. Also in Kyoto, walking west along Sanjodori,
enter the arcade where Sanjo crosses Kawaramachi and about 100 meters
on the left is a great shop for folders of all sorts.
Will remember this one for next time.
The shop on Sanjo looks more like a hardware store from the outside, but it's about 100 meters in from Kawaramachi on the left side. There will be a bin with small hand tools out front.
