As well as all the above suggestions (complete dis-assembly, cleaning,
ammonia), I've had pretty good luck doing the partial saturation inside
with 'Nature's Miracle'. It's an enzyme based sanitizer for getting dog
piss out of carpet, you can get it at a pet supply store. It's worked
well for both the bar smell, and even worse, the mouse nest stink. If
all else fails you can paint the inside of the cab, seal the stench in
any exposed wood.

Put some bleach in a spray bottle and lightly saturate the 'stinky'
area..
let dry for a day and air it out, then see if it still stinks.

I had a similar problem with a game, I'd already cleaned the outside
and vacuumed the inside. It turns out there are so many more places
crud can hide in amounts sufficient to produce the dreaded "bar smell".
I'd suggest going over the game again and cleaning the harness, upper
interior of the cab, any air vents, the monitor chassis (be careful not
to clean off the aquadag coating on the back of the tube, it's
important). Clean the bottom of the cab, the backside of the control
panel, everywhere.
Then follow up with a few sprays of Febreeze and hopefully the problem
will be gone.

I purchased Sega Outrun off of eBay about a year ago, and it works
fine. The problem is that whenever it gets humid, the cabinet, which
saw its fair share of beer and smoke, smells bad.
I have gone through and vacuumed and cleaned out the interior and have
camped Arm and Hammer inside since purchase. I still had to pull the
power for the cooling fan because of the smell, so I leave the game off
when its not being played.
Any suggestions would be greatly appreciated.
