Flying mounts: Ki-rin vs. Jabberwock vs. Dragon

Hey everyone, looking for some more advice.
Earlier in my game I polypiled a Unihorn into a saddle. Not as nice as
the Magic Marker I wanted, but hey, I had a pet Silver Dragon, so I
figured flying can be useful. But later on Medusa's, pet D got slimed,
and saddle went in the drink. So now I'm debating trying to get another
saddle and flying mount - I really like flying, and if I make it to Air
it will be Very Nice, but I've got a few questions, the main one being
What Flying Mount is Best?
1. Speed - mon1-343 shows Dragons only have speed 9, compared with
ki-rin 18 and J 12. If I zap a /oSpeedMonster at my mount, does the
base speed still matter, or does "monster becomes fast, or normal speed
if slow" from wan1-343 mean it sets speed to a specific value,
disregarding the base speed (other than determining if the monster's
base speed is normal or slow)?
2. Assuming base speed matters, ki-rin would seem to be the best mount
as it's the fastest; but since ki-rin's an A, and As don't eat, it might
be tough to keep it tame, if I understand things right. Are all As
immune to charm monster, too? When I tested in wizard mode, I was able
to tame a ki-rin with charm monster, but I was also able to tame an
Archon, and I could have sworn Archons were untameable, so I'm not sure
if they are tameable, or if I was just able to tame them 'cause I was in
wizard mode.
