Well, I would have considered jellies as a homogeneous substance while
I'd associate a blob with some liquid enclosed in some skin. (So we're
back at four different letters again? ;-)

Restrict the classes to creatures that look obviously different.
Being humanoid, the adventurer will have no trouble with fine
distinctions amonst fellow humanoids - so elves, dwarves, orcs
all get a letter despite looking much the same - but the difference
between a pudding and a jelly would be lost on them.

The freed letters could be used for more categories of demons, or
of humanoids.
