E11: Thin White (18ga white)
E12: Thin Brown/Black Stripe (18ga white/black)

Also, since I'm not using High Voltage displays, would it be best to
solder on the connection for that one (I'm assuming E5) and just not
put the fuse in, remove it from the transformer entirely (if that's
possible), or just terminate the wire with a cap? If someone can
double-check these for me and fill in the ones I can't determine (I
desoldered these instead of just clipping them) I'd be very grateful!!

I added the correct wire gauge and colors in the parenthesis by your
list...hope this helps!
