IIRC, China was mass producing (as in, by the ton) cast iron before Christ.
It's not rocket surgery.
The ore the Chinese had access to was high in phosphorous, which gives
it a rather lower melting point and other characteristics useful for
casting. I understand it'll melt from the ore without much forced
draft. However, once you know how they work blast furnaces aren't hard
to make, and they'll give molten iron from any decent ore.
That means decent farming
tools, with means good yields (especially with modern grains), which
means you can afford to keep training specialists.
Actually, the heavy plough by itself is sufficient to ensure a good enough
crop yield to maintain specialists. Everything beyond that is gravy.
The modern grains give more, but most of all they are far less likely
to fail in a bad year, especially if you primarily plant corn/maize.
Actually, having potatoes as an alternate crop is a great help, too,
as is having the domestic chicken (something most low tech societies
didn't) - they can be raised on kitchen scraps when you haven't enough
for a pig, and provide eggs and meat.
