Note Taking Sofware for sites that don't have note-taking

I'm looking for software that will allow me to take player notes for
sites that don't have that function built-in. Somebody suggested
Excel or another spread***, but the problem I have with those is that
every time I want to update the comments field, I have to start it
over---I can't find a way to simply add to that field without clearing
it out.

Is there a good note-taking software that lends itself to this task?
