Lovely neighbour next door gave me free access to her rhubarb patch, so
I've got a bunch now and am wondering what to do with it. I have
strawberries from last Spring in the freezer that need to be used up
before this year's crop, so strawberry rhubarb jam is first up. Also have
some frozen wild blueberries so will try BlueBarb jam for the first time
if I can Google the group for the recipe. Both recipes will be made with
low sugar Certo Light powder.
Anybody got any other interesting ideas for rhubarb? I personally
wouldn't do anything with it if I wasn't getting it for free - might make
a cobbler or pie - no big rhubarb eaters here.....
I was looking at our small patch or rhubarb the other day and found myself
thinking, "Hmmm. Rhubarb margaritas."
If I try it and it works out, I'll post.
