Sorry I forgot to add another pressure canner tip. If you have the rocker style instead of the dial pressure regulator, make sure you clean it after every use. Put the pressure regulator in a mug then pour in enough vinegar to cover. Let sit until you see a whitish foam. Rinse with hot water & allow to dry. This trick will remove any water deposit build up in the regulator and keep the regulator accurate. I'm not sure how to clean the dial regulators. HTH :)
There's shouldn't be any water deposits in the regulator. The only thing they are exposed to is steam, which condenses into distilled water. All the minerals are left behind in the bottom of the pot.
