I have a few books on Gluten Free subject. I find this is a really really a
good book, if not the best book on gluten and dairy free cooking.

Also if there is a "Whole Foods Market" nearby. Almost all the stores have
classes and support groups on special needs cooking.

I am not a celiac or have allergies, just on the gluten sensitivity side.
Therefore dairy products are fine with me. Really really you should get
that dummies book. The problem most of the gluten free books you will find
may or may not include dairy. It is a grab bag. also many of those gluten
books are not on the practical side of cooking... Too many expensive hard
to find exotic foods in their recipes that turn me off to many of the
gluten free cook books.

I suggest forget about baking for now. However, the gluten free corn pastas
are excellent, better than wheat based pasta, found in most major super
markets. Those products that come in can, like soups, beans, spaghetti
sauces, pizza sauces, tomato sauces are made with wheat as a thickener.
Look for the gluten free soy sauce bottles. Soy sauce is made with wheat.
Real soy sauce has no wheat in it, just the cheap junky stuff.

But why eliminate citrus and bananas?

Is this a medical testing problem from allergy test. OR are you buying into
the "The UltraMind Solution by Mark Hyman, MD"? If so it looks like your
in for one extreme diet!!! I have the book, never tried the diet, doubt I
could follow it. I have my doubts about the book and it's claims.
