Weekend Loin Chops

Lemon Lime went ok with pork but I won't do it again.
I have more of the chops as I sliced up the entire 8lb. plus pork loin.
Next weekend I'll try them with some sort of mustard treatment instead...
Served with a side of mushrooms treated with a sour cream sauce and some
fried red rice with veggies.
Recipes for the pork and mushrooms:
Lemon Lime Pork Loin Chops:
1" thick cut pork loin chops
Dried Lemon peel
Dried Tarragon
Granulated Garlic
White Pepper
Sweet Vermouth
Fresh Lemons
Fresh Limes
Place chops in a shallow pan and sprinkle one
good glug of Sweet Vermouth over them. Juice
one lemon and one lime and add that to the pan.
Sprinkle lightly with granulated garlic and white
pepper and generously with the ground lemon peel
and dried Tarragon.
Slice one lemon and one lime thinly and layer those
over the top of the chops.
Refrigerate to marinate for 8 to 12 hours.
Place in an electric grill, close lid and grill for 5 minutes.
The mushrooms and sauce could be served over the pork, but I chose not
to.
Mushrooms in Sour Cream Sauce
24 oz. halved white mushrooms
2 cups Roasted Chicken Stock
(chicken stock was left over from
the previous weekends roasted
chickens so was already flavored
with lemon, lime, garlic, tarragon,
paprika and pepper, stored in the
freezer)
1/4 cup sweet vermouth
1/2 onion, chopped
1 1/2 cups sour cream (approx)
Bring chicken stock to a simmer and
add chopped onions. Stir occasionally
and cook until onions begin to clear.
Add mushrooms and simmer until
the liquid in the pan is reduce by about
2/3 and begins to thicken. Add Sour Cream
and stir in well, then cook for an additional
5 minutes or so.
Remove from heat and let rest for
around 10 minutes. This helps let
it thicken more before serving.
