Yes, that is what I do pretty often. Something like a curry, only
needs rice to complement it..and that is easy. Or a salad to go along
with some of the other stuff.

Interestingly I've been reading NY Times food writer Mark Bitten's food
blog http://bitten.blogs.nytimes.com/ and he complains of the same
thing today--being unable to accomplish "sides" for a dinner.

I read that blog fairly often, although I have been slacking off this
past week.... I like his writing, and have gotten great ideas from
there.

I am just now reading a new cookbook/book about food:The Kitchen
Diaries by Nigel Slater. He often eats like that..sometimes just one
dish, or something really simple, or eats leftovers from the fridge,
and so on. My type of cook/eater. I am enchanted by this book, by
the way...

One of the things I am finding out, is that a lot of people equate
simple food, with very boring, or plain food. To me, it simply isn't
so.... A great roast chicken is simple food at it's best. And can be
really easy to cook.... When I am tired/exhausted (which seems to be
often lately), I get out a chicken from the freezer and roast it
(after defrosting it, of course). I sometimes vary the seasonings, or
the method slightly, but all in all it is a roast chicken.

This last part of the week and this weekend, it is meals from poached
chicken. Last night, I took part of the chicken into work in a chef's
salad. Might make another one for work tomorrow night, as it was an
all in one meal..and was easy to eat while I was charting. Either
that, or chicken salad sandwiches...another meal to eat on the run...

Tonight, I am cheating. I went to Trader Joes, and among other
things, I got some gyoza. I think my dinner will consist of those,
with a dipping sauce. Not sure what else, if anything.
