Yes, if you got all your protein from meat that was 75% fat,
you'd be over the maximum recommended amount of fat. You
need 60 grams of protein, but should consume no more than
about 80 grams of fat, according to U.S. RDA (which has now
been recently renamed the DRI).

However, if you're only eating a "Mediterranean" quantity of
these fatty meat products, and getting most of your protein
from vegetable or dairy sources, you could fall within the
guidelines.
