Maybe, but hopefully your choosing to accept peoples' advice as valid is
being based on more than just the fact of the advice-givers' originating

It's seeing the same dish prepared, in front of my eyes, in that region
in more or less the same way (variations abound). If they live/cook
there and are *all* wrong about that, not a lot to be done is there :)
Admittedly not cooking the choucroute *with* the pommes de terre is
'wrong'; just prefer them done separately.
Maybe the German food I know how to make isn't 'right' either LOL. But
most of my closest relatives are German/Austrian/Swiss (the rest are
Dutch and Polish) and I was brought up on that food, eaten in their
homes and in restarants local to them. So if they are wrong, then so am
I, ja?
There must be a dividing line somewhere.
It's the same with all the Chinese food I know how to cook. The vast
majority was taught to me by Chinese people from China/Hong Kong, Taiwan
and Singapore. However when preparing any one dish, inevitably one of my
other Chinese friends would say 'That's not the right way to make that.
My mother used to do it *this* way.' So what is a gourmand to do?
There's no possibility of winning the 'authenticity' game in the end :)
But it is fun though...
