I've never thought of "red snapper" as one of my favorite sushi fishes. I can't say whether or not tilapia is substituted but I don't like cooked tilapia much. I've even had it fished out of a tank and cooked then and there in a Chinese restautant but I can't say I'd bother again. Incidentally, for those without sea access, tilapia is a fast growing fish that the Chinese used to raise while the rice paddies were flooded, I believe.
