I knew a professional chef once that would verbally
abuse dinners who ordered 'his' steaks anything more
than medium done, but only in the kitchen where they
could not hear him [..]

That's not verbally abusing his customers, though. He kept his
vaunted opinion in the back of the house, where it should
remain.

A very gifted chef once joked at our table, "I prefer to be
known as a businessman rather than a chef. Chefs are
pretentious and rigid, unable to provide for their customers'
desires because they think they know it already. 'Trained'
chefs are even more rigid in the lack of imagination or
understanding."
