dinner last night (and the next 2 weeks at least)



I stopped at this specialty food store I frequent
to pick up a pineapple that was supposed to be on
sale. Ended up coming home with green beans (on sale),
red bell peppers (on sale), tangerines (marked down),
and sweet potatoes (marked down), but no pineapple
as the sale didn't start until the next day!!!

So, what the hell am I gonna do with all this stuff
since I had not made any plans for using it up?

I had a large "family" pack (about 5 lbs.) of country-style
ribs (pork shoulder/pork ***) in the freezer plus I still
have lots of those potatoes I got on sale way back
when (see earlier post about the baked potato and
sausage soup), as well as about a quart of frozen
chipotle tomato salsa that I couldn't use up when
it was fresh so I froze it thinking it would be good
in a soup or stew.

So I decided to make a stoup (stew/soup). I baked the
"ribs" to brown them and then scraped the whole pan
into my very large stock pot. (I didn't feel like chopping
them up beforehand - I figured they'd mostly fall apart
as the stoup cooked and if not I could just pull them
apart in my bowl when I ate it.) I added enought water to
more than cover them (about 6 qts.) and then dumped in
the beans, snapped (about 1 1/4 lbs.). I added about 7 medium
potatoes, peeled and cubed, and salt and pepper. I added
about 1 pint of processed onions and the quart of salsa.
I also added a large can of diced tomatoes. While that was
simmering for about 1 hour I cut the 3 large bell peppers
into large chunks and tossed them in about 20 minutes before
the end.

I must say this stoup is very tasty, which is a good thing
as I have about 4 gallons of it!!!! My giant stock pot is
about 3/4 full. It weighs a ton. I had lots of fun carrying
it to the fridge. If I didn't have a bad back before I'd have
one now.
