.....and I'll add that pasta salad can also make a superb picnic dish. Here
are some examples:
Thin noodles with sun-dried tomatoes, basil leaves, pine nuts, and roast
chicken chunks, dressed with extra-virgin olive oil and balsamic vinegar
Rice noodles with scallions and stir-fried beef strips, dressed with sesame
oil and sherry vinegar
Rotini with pitted kalamata olives, cucumber slices, red onion slices, and
tomato chunks, dressed with buttermilk, dill, garlic, and mint. You can open
some tuna to mix in at the last minute. Or you can crumble in some feta
cheese.
Cous cous with pine nuts, raisins, tofu fried with cumin, and black olives
Bow-tie pasta with broccoli, cashews, and chicken, dressed with lemon juice,
chile oil, and garlic
There's more in _Cooksmart_, but I don't have that book with me at the
moment.
