I've never understood other people's enthusiasm for tofu, but it may be my own tasting ability. It does add protein to Chinese dishes but, to me, it is absolutely tasteless and its texture unpleasant. You can do things with it to add some taste like marinading it and baking it or freeze-drying to give texture, as I think I have mentioned before. I cannot reach the level of enthusiasm in Shurtleff and Aoyagi's "The Book of Tofu, Protein Source of the Future-Now!" It has lots of information and recipes, practically none of which I have wanted to try twice.
