You got it steve.
Coconut oil is one of the healthiest oils around.,
I use it for almost anything I fry.
It is a little expensive but well worth it when you smell that wonderful
fragrance as it heats up.
For fried shrimp I get the oil almost to smoking. Dump in the (floured)
shrimp. Toss in a couple of finely chopped cloves.
Flip the shrimp around for about three minutes.
Squeeze a fresh lime over all and plate.
Heaven!
