I'm up early (four hours sleep, ugh) to make some munchies for us to share at work tonight. Working 12 hour shifts back to back leave me scrambling for ideas for easy to make appetizers that will reheat well in a microwave. Nothing elegant nor difficult. Perfect "eat at work food" and I'm pleased I could come up with this on short notice. We didn't plan this impromptu party until we were all walking out to the parking garage at 7 AM this morning. Husband was going to the commissary this afternoon anyway so I was able to give him a list of needed items. I'm bringing chili con queso (simply made with Veveeta and Rotel) Chips to go along, Hot fudge sauce with marshmallows, bananas and apples to dip into it; Italian sausage cheese balls; Sparkling grape juice and baby carrots.

Framingham Fudge Sauce

Amount Measure Ingredient -- Preparation Method

5 squares unsweetened chocolate
1 cup heavy cream
1 1/2 cups sugar
1/4 teaspoon salt
1/4 cup light corn syrup
2 tablespoons butter

Heat chocolate and cream in saucepan over very low heat, stirring constantly until chocolate is melted and mixture is smooth.
Add sugar, salt and corn syrup. Cook and stir until sugar is completely dissolved. Remove from heat and stir in butter.
Serve warm, or store in refridgerator in covered container. Reheat over warm water.
Makes 2 1/2 cups.

Italian Sausage Snacks

1/2 pound sweet italian sausage
1/2 pound hot italian sausage
1 pound sharp cheddar cheese -- grated
2 1/4 cups bisquick® baking mix
1 tablespoon fennel seed
2 teaspoons oregano

in mixing bowl, combine uncooked sausage with cheese, removing any casing. Knead or blend until well mixed. Add biscuit mix, fennel and oregano. Mix well until a dough forms. Shape into 1 inch balls. Place 1 inch apart on baking ***. Bake at 375 degrees for about 15 minutes or until nicely browned. Serve hot. Makes about 9 dozen.
TO Freeze: cool thoroughly on paper towels. Pack into airtight plastic containers. Store frozen for up to 5 weeks. To serve: thaw. Place on baking sheets and bake at 375 degrees for about 3 minutes or heated through.
