If I were to grate zucchini in portions designed for use in certain
recipes, then freeze it, would it still be useable when I thawed it
back out? I'm pretty sure that the solids and liquids will separate.
I guess I'm asking if I can use the separated stuff in a cake or quick
bread recipe, for example.
Or would I be better off baking stuff right away and freezing the
baked goods?

Not worth the trouble. It'll turn to mush when it defrosts. You're better
off buying new stuff in the supermarket when need it. No matter how bad the
quality, it'll be far better than frozen zucchini.
