With a lot of dishes, the taste is not the same if the "heat" is added
later. Kung Pao chicken comes to mind. The peppers have to be fried
until black and nearly crunchy before the other ingredients are added;
anything else, and it doesn't taste right. Certainly you don't get the
same dish if you cook it without most or all the peppers and then add --
what? -- at table.


Usually chili paste. Although I agree with you, if the dish is to be
shared, then I would prefer that it be spiced so that it can be shared,
and then I can add more heat at the table. If it is a "lunch special"
deal, where I get the dish and we don't share, then I like it hotter.
