Just lose the carrots:
Pot Roast in Foil - Betty Crocker cookbook
3 pound chuck roast
1 can (10 3/4 ounces) cream of mushroom soup
1 package onion soup mix (stir into 4 cups boiling water, reduce heat
Cover, simmer 5 minutes)
8 small potatoes
8 medium carrots, cut crosswise into halves
2 tablespoons water
Place piece of foil (I get the heavy duty kind for this) 30x18 inches,
in ungreased pan (I use a rectangular Pyrex dish). Place beef in
pan. Pour the hot soup over the beef. Add vegetables, sprinkle with
water. Fold over foil and seal. Cook in 300 oven for 4 hours.
