What are your favourite uses for Celeriac?
Also known as Celery Root, Celery Knob and several other names.
I use it mostly when I make Chicken Soup or stock. However, I also made a salad once and it was a great success with my guests.
Bubba Vic, also known as Victor sent me the recipe.
Celeri Remoulade
Celery Root in Mustard Sauce2 tablespoons freshly squeezed lemon juice 2 tablespoons imported Dijon mustard or to taste 1 cup creme fraiche or heavy cream Salt and freshly ground black pepper 1 celery root (about 1 pound; 500 g)
1. In a large mixing bowl, combine the lemon juice, mustard, creme fraiche, and salt and pepper to taste; mix thoroughly. Taste and adjust the seasoning.
2. Quarter the celery root and peel it. Grate coarsely, in a food
processor or on a Mouli grater. Immediately add it to the mustard sauce
and toss to coat. Season to taste. Serve as a first course.
Yield: 4 to 6 servings
________________________________Alternatively, toss the grated celery root (or one cut in very thin strips) with the juice of one lemon and refrigerate for 20 minutes. Then mix together mayonnaise (preferably home-made) and mustard. Toss with the celery root and serve cool. .
