DH cooks liver in such a way that it comes out very moist and tasty. We both like it smoothered with sauteed onions. Yes that is sour cream on my potatoes. It is low fat and along with my yogurt snack provided my calcium source for yesterday.

Ohhh!!! Also in Italy we make liver in this way. We call it "Fegato alla veneziana" (venetian liver).
I didn't know there was a name for it. That's neat to know.
Before cooking , we flour it. Then we put it in a frying pan with butter, onions and laurel.
DH dredges it lightly in seasoned flour and always cooks it with the onions. He doesn't use the laurel - he likely doesn't know what that is.
At the end, some black pepper over! Yes! Very tasty also for people who doesn't like liver at all!
This is the only way I like liver. My mom cooked it until it was about the texture of a sole of a shoe and DMIL cooked it in stewed tomatoes. DH hates warm tomato chunks so that won't work. The way he does it is very good!
Cheers
