I doubt your horse has a "protein" allergy. If may have an allergy to
some component of the feed you used.
Talk you your vet. Call your county agent (if you're in the U.S.) and
see if your state has an extension equine specialist. Get some
specialized help from them.
To put weight on a horse, any horse, you need to put in more calories
than are going out. You need to balance the ration. Tamara can tell
you more about this than I can, but you don't need a big protein
number, you need a big total digestable nutrician (TDN) number. You
also need proper ratios of protein, roughage, vitamins, minerals, etc.
You said the horse was once on pasture and implied that it did well
there. Put it back. Suppliment the grass with things that will kick
up the TDN for the entire ration.

There are lots of pet foods out there for "special needs" pets. Most,
in my very skeptical opinion, are designed more to relive the pet
owner of their "chump change" than to provide real assistance to the
animal. Unless you have a proper, veterinary diganosis of a problem
using these very high dollar feeds is just another way to make the
shareholders in Ralston Purena very happy.
If there was point in time where the horse was holding condition and
not showing signs of problems then try and return to that point.
Then, if you need to add something, you will have a base point to
start from.
