I'm loving this idea....but how many apples? 4 cups like the sweet potatoes? More? Less? Should it be 4 cup total between the two?
And how do I tell it's "done"?

Great, easy and fairly fast..
Sweet Potatoes and Apples.
Peel and thinly slice sweet potatoes. (raw ones) about 4 cups or so.
Core and thinly slice apples (can be peeled, but I leave the peel on the apples. It's faster.<G>)
Toss with brown/white sugar, cinnamon, whatever other spices you like with sweet taters and apples. If you have some, toss in some raw cranberries. (Someone made it once with whole berry cranberry sauce and a bit less sugar.)
Dot with some butter and bake, covered until done. (Somewhere around 350-375 degrees F. is good.)
Easy to increase/decrease amounts. Sugar amount should be a bit less than for an apple pie, depends on how sweet you like this kind of dish, and the kind of apples you have. (For about 4 cups of sweet potatoes and apples mixed I use about a half cup to 3/4 cup each of brown and white sugar, about a tablespoon or a bit less of cinnamon, a bit of cloves, ginger and such.)
Good warm, room temperature or cool. Keeps fine if there are leftovers (but I never seem to have leftovers when I take this dish to potlucks. <G>)
Even people who say they don't like sweet potatoes or yams do like this dish.
