Howdy!
Organize: there's *that* word again.
<g>
I call it Separate.
It starts out with color.
The too-many-colors-to-decide fabric goes by theme,
cats, kids, florals on black, Peanuts, collections (just received
the Dorothea's collection from Elm Creek Quilts, Red Rooster--
Fabric Shack is prompt & friendly), metallica.
The Kaffe Fassett group just refuses to be separated by color,
it all stays together
(you know some fabric has a mind of its own!).
Little scraps (4" & less) are in their own little world.
There are a few sorted by project. But, mostly, it's by color.

Go with what works for you, Morag.
If your husband wants to sort by color, give him a box of crayons. <g>
