Sounds like she came from the Bavarian part of Schwaben :-)
My MIL used to make potato dumplings about the size of tennis balls, maybe
even a tad bigger. Croutons in the middle. Her recipe used no eggs. It was
about half raw grated potatoes, squeezed in a kitchen towel to extract as
much liquid as possible (or use a juice centrifuge). Add as much cooked
mashed potatoes. Try a little piece, and maybe add a bit of the potato juice
if it's too dry. Fortunately, this mixture is sold ready to cook in every
Bavarian supermarket! I could even buy ready-shaped with croutons in the
middle, 4 to a package in the freezer section, if I had no pride.
