towel on your carboy, direct a fan on it also. The
added airflow should lower the temp another few degrees.

That is a very good point. It works like a swamp cooler.
Assuming you have an extra bath, you could put at least
two carboys in it. If you fill it to about 12" with
cold water and drape soaked towels around it with the
towels dropping down into the water, that's about as cold
as you can get it. The fan should drop the temperature
about 2%.

No extra bath. I have a rectangular tub a little larger than the carboy and
about 9" high. The tub gets moved to the back of the bathtub and covered
with a large trash bag when we shower. It worked for the cider, even though
I didn't use the water bath, cotton T or fan.

Two questions remain. Best way to wake up the yeast? Should I start the
must(?) with full honey or let it start at a lower honey level and add more
as it gets going?

Of course, if you live in a desert area or any place
in Texas, your cold water may not be below 72F.

Los Angeles water is cooler than that, but not something you'd wanna drink,
if you had a choice!
