Let's all agree to use the term "clean" generically for sterile or
sanitary. I sterilize somethings (like my air stone and ball valves);
other thngs I sanitize (fermenter, kegs, pump, hoses, ...).
Summary:
1) Use quality ingredients.
2) Formulate recipes. I really like Ray Daniel's book.
3) Keep it clean.
4) Cool your wort fast. Note: With regards to the entire brewing
process "be efficient."
5) Sufficiently boil your wort. See note above.
6) Pay attention to time and temperature. See note above.
7) See 5).
8) Use whatever fermentation vessel is most economical and easiest for
you. Stainless Steel cylindro-conical baby!
9) Pitch a large healthy yeast culture.
10) If you can afford to, fabricate or purchase quality equipment.
11) Enjoy the process and share and enjoy your beer.
For myself I'd add a couple more:
12) Keg your beer. Bottling is a huge hassle. Nothing beats the
"cool" factor of having draught beer at your house.
13) Always add hops three times. The first time is for flavor and
aroma and to "send your taste buds to happy town". The second time is
for "balance and body". The third time is to "lock in that great
pilsner taste!" (I just learned about step 13 this weekend while
watching a Miller Lite ad during the NCAA tourney. It's on TV so I
know it's true)
