the highest delta they show is 140F and that would most likely require the 200K BTU/hr gas rate but would flow 2gpm which is the rate of a faucet.
The issue would be not scalding someone in the house if they turned on the water at the same time you were drawing water for the infusion. IMO it would be better to draw off hot water at a reasonable temp, say 120F and then heat it up in your kettle to the desired strike/sparge temps.

Rinnai's site is pretty poor when it come to providing technical specifications. The chart you mention is definitely for the stock residential controller and I can find nothing on their site for the mcc-91 controller which allows the 185F. I'll probably contact them to see if I can get more information.
I'm willing to guess that the flow rate decreases significantly for 185F; though this would not be much of a concern. I'm sure I could fill my tun and hit the desired target temperature allowing for a slight drop in temperature due to time needed. For sparging this would be a non issue as I seriously doubt that my sparge water needs would exceed the flow rate.
I'm not worried about scalding people. My house; my water. I am lord on brew day.
