Boy, moving a lager to secondary in less than a week is damn quick!
I've used a similar fermentation method for years. The extra mass of
the water buffers thermal changes. In the summer, I can add ice packs
to keep things cool. In the winter, I put an aquarium heater hooked to
a timer in the water. By adjusting the thermostat on the heater and the
timer, I can maintain perfect lager temps.
