John, I am more than willing to believe it was pilot error on that
FG reading. Looking over my notes for my last few batches
I see where I've consistantly been 6 to 8 points lower than
what I expected. Three things have changed during that period.
1. New hydrometer (did you know hydrometers don't bounce?)
2. I've started reading at the peak on the hydrometer rather than
in the valley, but I figured as long as I was consistant it would
be close enough.
3. I've started using a beer thief to pull the sample from the top
of the carboy instead of out of the racking cane after racking
to the bottling bucket.
I really hope that one or more of those changes can account for
this low FG because everything else seems so right with this
batch. The color is right where I wanted it, it tastes good and
has already started carbonating in less than 48 hours. I've been
rousing the yeast in the bottle by inverting the bottles 1 or 2
times a day.
BTW which infection would cause this and how would I recognize
it so I can toss the batch if and when it rears it's ugly head?
