You'll still need a chainguide or a derailer to serve that purpose. Just

And unless you're weight-phobic, that's a reasonable excuse to plop a
second ring on, even if only to serve as a chain-keeper.
Not a problem when using a single pivot mech. Modern rear mechs may
havve their top springs removed or the top pivot locked in some other
way and they will then perform as good as a single pivot on a gear
train. Time triallists used a compact 6 with a Nouvo or Super
Record. Usually on a 54 ring. The NR would also be used on cross
bikes which may have 2,3,4,or 5 sprockets depending on rider
preference. Compact freewheels were not adopted for cross as quickly
as for road, we were still in the day of friction levers, not ideal
when combatting a rough or slippery course, hence the low count
freewheels.
