not only does grit embed just like any other pad, their stopping power
in the wet is abysmal. and i mean potentially fatally abysmal.
I melted a pair of Dia-Compe (I think, unless they were Shimano)
brake pads in a single cyclocross race in wet sandy conditions
(in Santa Cruz county if that helps you with the soil type). Well,
they didn't literally melt, but they were half gone and and the
half left was a soft conglomerate or slurry of brake pad goop
and sandy grit. I replaced them with Kool Stops and had no
further problems in similar conditions, including later races
on the same course. IMO, if you don't get the salmon ones,
the black Kool Stops are also a significant step up from other
brands.
No brake pad is a magic bullet in the wet. You gotta ride
smart and brake early to wipe some of the water off the rims.
