I doubt that you'll find that to be a problem. I frequently just use a
single rear pannier when going grocery shopping and come back with 10 -
20 pounds on one side. Even heavily loaded the imbalance is hardly
noticeable.
Ditto. I have a satchel/overnight type bag that I had lying around, placed a
piece of hardboard as stiffener inside it, drilled through and made two
aluminium hooks for it with a bolt and wing nut throught each hook. Cost
around $10.00. I use it for chucking groceries, my laptop, books, and all
sorts of junk in rather than use my good touring panniers when running
around town and leaving bike chained up. It is no trouble to ride at all
with weight on one side, but best of all there is no poncy brand name to
attract the light-fingered. I know how long my Ortliebs would last
unattended.
