Mountain House.

The stuff is pricey though.

True. Five or six bucks per meal is about the average price. If you were to
go with something cheaper (say regular, non parboiled rice) that meal would
cost pennies at most. But... now, instead of just using an alcohol burner
and a cheap cook pot, you now need a better stove (simmering for the rice),
maybe a pot cozy, different ($$) fuel, more fuel, etc. Add in the ease of no
dishes and a very simple process and to me, it's a bargain. YMMV, of course.

I also can't see cramming a week's
worth of that in a bear resistant cannister.

Depends on what else you're using. I've done it in the past. Six nites in
Yosemite consisted of 7 MH meals (one back-up), 6 breakfasts (I do the dry
cereal in a ziploc with powdered milk thing -- just add water), A couple
boxes worth of granola bar stuff for lunches, coffee, crystal lite, and some
assorted snacks (slim jims mostly). All of this fit into the Garcia I rented
thru the park. Wasn't simple; took some creativity to use all of the little
gaps, etc., but it wasn't too hard, either.

Maybe mix a little
in with several pounds of trail mix. I saw one of their beef
packages. Just 500 total calories and $5 to boot.

The 5 dollar part I already commented on.... the 500 calories, is I believe,
per serving, no? I've never seen anyone use the single serve packs. I'm sure
some people do -- heck, they sell 'em, no? -- but the 20-oz "Serves two" is
just about the right amount of food for me after a long day. Again, YMMV....

However - it does seem make it clear that eliminating the
moisture in food results in a lot of weight savings.

Yeppers. Slightly over eight pounds per gallon eliminated. :-)
