One of the reasons why a a snake stage box is (usually) steel is
because it gets knocked around a bit. Unless the cable has an overall
shield, the box isn't usually tied to the individual mic cable shields
because you don't necessarily want to connect all of them together. It
could make for a ground loop.
Generally a rack mounted panel full of connectors isn't shielded
unless it's in a particularly fierce EMI field. I've built many snakes
with aluminum stage boxes and mic connector panels that are open at
the back and have never had a problem with hum and noise attributable
to a lack of shielding. I won't go so far as to say that it's never
necessary, but try the simple way first.
If you need a shielded rack mounted connector panel, the way to do it
is to use a steel chassis about 17 inches wide and make or buy rack
mount ears for it. I'm pretty sure that I've seen rack mount steel
cases, but not recently. I think Markertek sells modular XLR panels,
so they probably have an enclosed rack mount one if you really need
it.
