Currently, this is my basic setup:
Presonus Blue Tube Preamp
Echo MIA Midi Audio Card
Yamaha 8-track Mixer
Adobe Premier
I am trying to record drums using 6 mics.
Obviously to 6 individual channels - one for each mice. Then you need 6
analog inputs in your recording device (computer´s soundcard in your case).
The Echo MiaMIDI has only 2 analog inputs, so you need a different card with
more inputs and additionally a mixer that gives you at least 4 individual
output channels + using the BlueTube for 2 more mics.
actually hook all the mics into my mixer and run the S/PDIF out to my
card. That would inturn create 6 different tracks
No, only 2! Of course you can record 6 tracks in Audition (or any other DAW
software), but they will only have the 2 (L+R) tracks, that "come into" the
computer through SPDIF.

Correct! There´s the old 8ch ADAT connection standard that uses the same
optical fibre cables as optical SPDIF. ADAT recorders are somewhat outdated,
but the connection standard still gets used a lot, though. A lot of small
hard disk recorders and stuff like that have ADAT.
Unless ofcourse, you want to simply do all the volume and
mixing through the mixer itself.
That´s what you can do with your current Mia card.
Now, what format is available that would allow me to record 6-8 tracks
simultaneously and have them appear as individual tracks on Premier? I
would like to edit everything in my program instead of using hardware.
It´s hardware issue, not a software setting! You won´t find a way around new
hardware, i.e. an 8 ch soundcard, if you want to record a drumset with 6
mics to individual channels. Maybe even a different mixer model with more
outputs (preferrably "Direct Outs" or at least "Insert" jacks for the mic
channels). You did not give detailed information about your current mixer.
The model number would help to tell you, if it will meet your needs or not.
When you´re there already, look for "group outs", "direct outs", "inserts"
and tell us which of these are on your mixer.
