For recording, I'll second the RE-20 - on tenor, at least. Try about 18"-24"
away about 45 degrees to the key side for starters. If it's too clacky, try
moving opposite the key side. Stay out of the bell for the most part. In
general, good dynamics (421, 441, RE-20, etc.) and ribbons are a good
starting point.
