That's the easiest way to do this, but I'm not sure how common that
adapter is. Doesn't that mic come with adapters to 1/4" plugs, for
which XLR adapters are more common?

Yes, good mono is better than noisy stereo, but there's no reason why
summing the left and right outputs of your mic will be any less noisy
than recording stereo. You can always mix the stereo recording to mono
if you decide that sounds better for the music you've recorded.
If you really want to get mono out of that mic, you have to sum the two
outputs. A mixer is the normal way to do this.
You can always cut off the mini plugs and replace them with XLRs or
1/4" plugs, but since you seem to be a real novice, I wouldn't
recommend that you try to strip and solder the mic cable. You could
also make a new cable for the mic using a 5-pin XLR to two of whatever
kind of plugs you need on the other end. This is probably a job for a
shop, given your apparent inexperience. Forgive me if I'm misjudging
you, but if you knew enough to wire up a new cable or replace the
connectors you probably wouldn't have asked what you asked.
