"Pushing Up Daisies"? isn't that the common cliche term for being dead?
Just wondering.......

Because the people he deals with in the series aren't just dead - that
is, they aren't just "pushing up daisies." Instead, they are dead,
then not dead ("pushing down daisies"?), then sometimes dead again.

By just using "Pushing Daisies," they change the unidirectional nature
of the standard phrase, thus better reflecting the Pie Maker's
abilities (and limitations).

Exactly. And, it makes perfect sense because the oft used phrase is Pushing
up the Daisies.
