There are two different ways that you can use RJ45's and CAT5/5e wire in
lighting systems.

One way is to run DMX directly over the CAT5 wire. If you browse around
ESTA's website, I believe they have some recommendations on how to do this.
DMA512A also addresses this (DMX 512A/ ESTA E1.11 section 7.3) It basically
says you can only use RJ45 modular connectors in fixed installations
where the connections are not expected to change regularly. You really
shouldn't put an RJ45 DMX connector on a portable dimmer pack or moving
light.

The other common way is to tunnel one one or more universes of DMX over
ethernet. There are several popular protocols for doing this, including ARTnet,
ETCnet, ShowNet, Pathway, and so on.

The type of gear you need to handle each method is very different,
